Seasonal and regional products play a major role in Held's cuisine, which are often flavoured internationally and thus sent on a journey, but brought back to the Salzkammergut at the last moment. Without exception, everything is home-made: the bacon is smoked directly at the Siriuskogl in the forest, and a wide variety of ice creams, including classics and unusual flavours such as asparagus white chocolate, are made with love. New ideas are constantly emerging in the kitchen and recipes are constantly being tinkered with and refined. The standard is high: everything should be different from other restaurants. The passionate chef is convinced that different processes can go wrong from time to time so that something new can be created.
